Gluten-Free Fudge

Ingredients
            1 pound confectioners sugar
            ½ cup good cocoa mix (powder)
            ¼ cup milk (whole or 2%)
            1 stick of unsalted butter
            1 tsp. of alcohol free vanilla

Directions
            If possible, sift the sugar
            Combine all dry ingedients in a microwave safe bowl
            Add milk
            Add butter
            Microwave the ingredients in bowl on high for 3 minutes
            Stir
            Then add vanilla and stir
            Freeze for 10 minutes or longer!

Gluten Free Flour Mix

4 1/2 cups white rice flour
1 1/2 cups sweet (glutinous) rice flour (there is no gluten)
2 Cups potato starch (not potato flour)
1 cup tapioca starch (also known as tapioca flour)
4 tsp. Xanthan Gum

I place all the ingredients in a freezer bag and shake the bag. All the flours are inexpensive and the recipe makes 9 cups flour mix. This can be stored in the freezer when not in use.

The ingredients for this recipe can be found at a health food store.

Note: Xanthan gum is expensive however, you will have it for a long time and it will not go bad in the freezer.
This gluten free flour can be used in all regular recipes. Ex: if a recipe calls for 3 cups all-purpose flour then you would use 3 cups of this flour blend.

Chicken Burgers

Ingredients:
1 lb. ground chicken or 4 preformed chicken burgers
½ tsp. Italian seasoning
Black pepper
Salt

Marinara Sauce (store bought or homemade)
Shredded Mozzarella Cheese
Prosciutto slices

Directions:
In a mixing bowl add ground chicken, Italian seasoning, black pepper, and salt and mix together
*If using already formed burgers, sprinkle Italian seasoning, black pepper and salt on both sides

Cook in a skillet or on a grill until fully cooked

Add a slice of prosciutto on chicken
Spoonful of Marinara Sauce
Sprinkle Mozzarella Cheese

Add bun if desired
